Leek soup with minced beef and mushrooms

We all know those days that go wrong from the moment you wake up. It is too cold to get up but you have to. You take a shower and when you step out you realise you did not bring a towel. So all the way back to the drawer, leaving wet stains everywhere. You want to make breakfast and then discover you bought a million things you did not need in the supermarket yesterday but the one thing – bread – is still on the shelf in the supermarket. You drag yourself to work and your boss yells at you before even saying ‘Good morning’. Or maybe you don’t even have a bad day but just feel like curling up on the couch. You need soul food! And here is one of my favourite soul foods:

Leek soup with minced beef and mushrooms


What you need (I am using the metric system but you’ll find a converter here):

500 g leek

300 g minced beef

200 g mushrooms

200 g low-fat soft cheese (the stuff that melts)

750 ml vegetable stock

2 onions

salt, pepper, curry powder, garlic


What you do:

Cut the onions and briefly roast them in a tsp of oil. Then add the minced beef and sear it until it is brown. Season with salt and pepper. In the meantime, wash the leek and cut it into rings (the white and green part). Wash and cut the mushrooms. Bring your vegetable stock to the boil and add the leek, the mushrooms and the beef. Add some garlic if you like. Let it simmer for about 30 minutes, then add the cheese. Simmer for another 15 minutes until it is melted. Depending on how thin or thick you like your soup, add fluid or let it simmer longer. Season with a bit of curry powder.

This is already it! Do not eat the whole thing on the first day, it is so much more yummy on the following day – plus, if you eat this whole portion, it will not matter anymore if it is low-fat cheese or not – it is too much!

  2. Oh man.. DELISH!!! I didn’t have any veggie stock, so I used beef. I also added some red pepper, just for a bit of color. Sooooo good! And of course, even better the next day for leftovers. Thanks for sharing! 🙂
